Meatless Monday Recipe: Black Bean and Corn Salsa

Are you joining us in making Mondays Meatless? A sunny spring day like today is a nice reminder that soon it will be time for sipping cocktails on the patio in summer shorts. On many such afternoons, my friends and family have enjoyed this simple black bean and corn salsa with brimming bowls of tortilla chips. Summer might still be a few weeks away, but it's never too early for a delicious taste of the long-awaited season ahead. Chop up the following ingredients, stir, and serve with chips, or alongside any of your favorite warm-weather meals.

4 tomatoes, seeded and diced
1 cup corn, canned or fresh
1 can black beans, drained and rinsed
1 avocado, diced
1 red onion, diced
2 pickled jalapenos, seeded and diced
1 bunch cilantro, chopped
juice of two limes
salt to taste
